- 6 large Granny Smith apples peeled, cored, and sliced
- ¼ c. brown sugar or Sucanet
- ½ c. toasted wheat germ
- 3 tbsp. currants plumped in hot water & drained (or sub. with raisins or dried cranberries)
- 3 tbsp. chopped almonds
- 1 ½ tbsp. cinnamon
- 3 tbsp. coconut oil or softened butter
- ½ c. maple syrup
- ½ c. water
Heat oven to 350° and spray a glass or ceramic baking dish with cooking spray. Place sliced apples in the baking dish. In a small bowl combine brown sugar, wheat germ, drained cranberries, almonds, cinnamon, and coconut oil. Mash and mix with a fork until all ingredients are well combined. Spread mixture over apples. Drizzle with maple syrup and water. Bake for 45 min. Remove from oven and serve warm.
